The more marbling, the more flavor! Marbling is what gives beef its flavor, juiciness and tenderness. Marbling is one criteria of how the USDA grades beef in the United States: USDA Prime beef has the highest marbling score or fat content, followed by USDA Choice. USDA Select has only slight marbling. Marbling comes with a price! The more marbling, the more flavor, the higher the rating is, and the more expensive it is!  When cooking, marbling adds flavor and juiciness as the fat melts into the steak. The marbling keeps the meat moist, so natural juices don’t evaporate in the pan. Some fats are undeniably bad for you, but did you know that the intramuscular fat that creates marbling can be good for you?
